A Little Stevia Makes Coconut Macaroons a Candida Dessert. Unsweetened shredded coconut, egg whites and powdered stevia are all allowed Candida foods. I prefer SweetLeaf Stevia powder.
3 large egg whites at room temperature, 1 teaspoon vanilla extract (the alcohol will evaporate out during cooking), 1 teaspoon of white powder SweetLeaf Stevia, 1 1 /2 cups of unsweetened finely shredded coconut, 1/4 teaspoon of salt, parchment paper.
Preheat oven to 325 degrees F. Whip egg whites and vanilla until peaks form. In a separate bowl combine the shredded coconut, stevia powder and salt. Fold about 1/3 of the shredded coconut into the whipped egg whites , fold in rest of the coconut 1/3 at a time. Let set about 5 minutes. Make drop cookies about 2 teaspoons each onto the parchment paper. Bake about 15 minutes or until they are lightly brown.
Let cool before eating and store in an air tight container. Add an almond and Drizzle sugar free chocolate syrup over this candida dessert and it become an almond joy. Or cheat just a little bit and use just a teaspoon of real chocolate syrup drizzled over the coconut macaroons.
